Description

This Egg & Tomato Breakfast Pizza is a delicious and easy-to-make morning treat featuring a crispy pizza dough topped with mozzarella, parmesan, fresh cherry tomatoes, green onions, and basil, finished with perfectly baked eggs. It provides a delightful blend of savory flavors and vibrant colors, perfect for a satisfying breakfast or brunch.

Ingredients

Scale

Pizza Base

  • 1 pizza dough
  • 1 tablespoon olive oil

Cheese Toppings

  • 1 cup shredded mozzarella
  • 1/2 cup shredded parmesan

Vegetables & Herbs

  • 1 cup cherry tomatoes, halved
  • 3 green onions, thinly sliced
  • 1/4 cup fresh basil leaves

Eggs & Seasoning

  • 3 eggs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 450 degrees F (230 degrees C) to ensure it reaches the ideal temperature for baking the pizza with a crispy crust and perfectly cooked eggs.
  2. Prepare Pizza Dough: Stretch or roll out the pizza dough into at least a 12-inch round shape and transfer it to a pizza stone or an oiled baking sheet to prevent sticking and promote even cooking.
  3. Add Oil and Cheese: Brush the surface of the dough lightly with olive oil. Evenly distribute the shredded mozzarella and parmesan cheeses over the dough to create a cheesy base layer.
  4. Top with Vegetables and Herbs: Scatter the halved cherry tomatoes, thinly sliced green onions, and half of the basil leaves over the cheese layer to add fresh flavor and color.
  5. Add Eggs and Seasoning: Carefully crack the eggs on top of the prepared toppings, spacing them out evenly. Sprinkle the sea salt and ground black pepper over the entire pizza for seasoning.
  6. Bake the Pizza: Place the pizza in the preheated oven and bake for 8 to 10 minutes for runnier yolks or up to 12 minutes if you prefer the eggs cooked through.
  7. Garnish and Rest: Remove the pizza from the oven and immediately sprinkle the remaining fresh basil leaves on top. Let the pizza rest for a few minutes before slicing and serving to allow the flavors to meld and the eggs to set.

Notes

  • Use a pizza stone if available to achieve a crispier crust.
  • Adjust egg cooking time according to your preferred yolk consistency.
  • Fresh basil adds the best flavor; substitute with dried basil if fresh is unavailable, but add less.
  • For a heartier pizza, consider adding cooked bacon or sausage.
  • Allow the pizza to rest before cutting to prevent toppings from sliding off.
