Vegetables
- 2 tablespoons olive oil
- 1/2 medium onion, cut into thin strips
- 2 cups broccoli florets
- 1 red bell pepper, cut into thin strips
- 5 ounces mushrooms, sliced
- 1 cup snow peas or sugar snap peas
Sauce
- 3 tablespoons honey
- 1 teaspoon grated fresh ginger
- 3-4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon apple cider vinegar or rice vinegar
- 1/2 cup vegetable broth or chicken broth
- 1/2 teaspoon toasted sesame oil
- 1 tablespoon cornstarch
For Serving (Optional)
- Chopped scallions, to taste
Instructions
- Prepare ingredients and start base. If serving with rice or noodles, begin cooking them first as the stir fry cooks quickly. Chop and prep all vegetables and sauce ingredients ahead of time for efficiency.
- Mix the sauce. In a bowl, whisk together honey, grated ginger, minced garlic, soy sauce, vinegar, broth, toasted sesame oil, and cornstarch until smooth to create the stir fry sauce.
- Heat the skillet. Pour olive oil into a large skillet and heat over high heat until the oil shimmers, indicating it is hot enough for cooking.
- Cook the vegetables. Add the onion, broccoli, bell pepper, mushrooms, and snow peas to the hot skillet. Stir frequently and cook for 4 to 5 minutes until the vegetables are tender-crisp.
- Add sauce and finish. Pour the prepared sauce over the vegetables and stir briskly until all vegetables are coated and the sauce thickens, about 1 to 2 minutes. Remove from heat.
- Serve. Serve the stir fry immediately over rice or noodles, garnished with chopped scallions if desired.
Notes
- Adjust honey amount for sweetness preference.
- Soy sauce can be substituted with tamari for gluten-free option.
- Vegetable broth can be replaced with chicken broth for non-vegetarian version.
- For extra protein, add tofu or cooked chicken to the stir fry.
- Cook vegetables to your desired tenderness; stir frying aims for tender-crisp texture.
- Use a large skillet or wok for best stir-frying results.
