Description

Delicious and easy-to-make Pepper Jelly Sausage Breakfast Bites featuring savory breakfast sausage, sweet and spicy pepper jelly, and optional cheddar cheese all baked inside flaky mini biscuit dough. Perfect as a breakfast treat, appetizer, or snack.

Ingredients

Scale

Sausage Mixture

  • 1 pound breakfast sausage (mild or spicy, depending on preference)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper

Other Ingredients

  • 1/4 cup pepper jelly (store-bought or homemade)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 package of mini biscuit dough (or homemade biscuit dough)

Instructions

  1. Cook the sausage: In a skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked through, about 6-8 minutes.
  2. Season the sausage: Drain excess grease from the cooked sausage and stir in garlic powder, onion powder, and black pepper for added flavor.
  3. Preheat oven and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or line with paper liners.
  4. Prepare biscuit bases: Roll out the mini biscuit dough and cut it into smaller rounds. Press each round into the muffin cups to form the base layer.
  5. Add sausage mixture: Spoon about 1 tablespoon of the cooked sausage mixture into each muffin cup over the dough.
  6. Add toppings: Top each bite with about 1 teaspoon of pepper jelly and sprinkle with shredded cheddar cheese if desired.
  7. Bake: Place the muffin tin in the oven and bake for 10-12 minutes, until the biscuit dough is golden brown and cooked through.
  8. Cool and serve: Remove from oven and allow bites to cool slightly before serving warm as a breakfast treat, appetizer, or snack.

Notes

  • Use mild or spicy sausage based on your heat preference.
  • Cheddar cheese is optional but adds a nice richness and flavor.
  • Paper liners help with easy removal and cleanup.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
  • If homemade biscuit dough is used, ensure it’s rolled to similar thickness as mini biscuit dough for even baking.
