Easy Papparoti is a delightful Malaysian coffee bun featuring a soft, buttery dough filled with a chilled butter cube and topped with a signature crisp coffee-flavored topping. This recipe yields 6 to 8 golden, fragrant buns that are perfect for breakfast or dessert.

For the Dough:
- 2 1/4 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp instant yeast
- 1/2 tsp salt
- 1/2 cup warm milk
- 1/4 cup warm water
- 1 egg, room temperature
- 2 tbsp unsalted butter, softened
For the Filling:
- 6–8 small cubes of unsalted butter (about 1 tsp each), chilled
For the Coffee Topping:
- 1/4 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 egg
- 1/2 cup all-purpose flour
- 1 tsp instant coffee dissolved in 1 tsp hot water
- 1/4 tsp vanilla extract
Instructions
- Mix the Dough: In a large bowl, combine the all-purpose flour, sugar, instant yeast, and salt. Add the warm milk, warm water, and room temperature egg, then mix until a soft dough forms.
- Knead the Dough: Knead the dough for 8–10 minutes until it becomes smooth and elastic. Incorporate the softened unsalted butter by kneading until fully combined.
- First Proof: Cover the dough with a clean cloth or plastic wrap and let it rise for 1 hour or until it doubles in size, creating a light and airy texture.
- Prepare the Coffee Topping: Meanwhile, beat the softened butter and powdered sugar together until light and creamy. Add the egg, dissolved instant coffee, and vanilla extract, mixing well. Gradually incorporate the flour until the mixture is smooth. Transfer the topping mixture to a piping bag and refrigerate until ready to use.
- Shape the Buns: Once the dough has risen, punch it down and divide it into 6 to 8 equal pieces. Flatten each piece and place a chilled butter cube in the center. Carefully seal the dough around the butter to form a smooth ball.
- Second Proof: Arrange the shaped buns on a baking tray lined with parchment paper. Cover and let them rise for another 30 minutes to allow puffing.
- Preheat Oven and Pipe Topping: Preheat your oven to 350°F (175°C). Pipe a thin spiral of the coffee topping over the top of each bun, covering the surface evenly.
- Bake: Bake the buns for 15–18 minutes or until they turn golden brown and the coffee topping cracks and crisps beautifully.
- Cool and Serve: Remove the buns from the oven and allow them to cool slightly before serving. They are best enjoyed warm, fresh out of the oven.
