Description

This easy chicken enchiladas recipe combines shredded chicken, flavorful spices, and melted cheese wrapped in tortillas and baked to bubbly perfection. Perfect for a quick weeknight dinner, these enchiladas offer a comforting Mexican-American casserole experience with optional toppings like green onions, cilantro, and sour cream to add freshness and creaminess.

Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken
  • ½ cup red enchilada sauce
  • ½ cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder

Enchiladas

  • 8 small flour or corn tortillas
  • Remaining ½ cup red enchilada sauce (from 1 (10 oz) can)
  • 1 cup shredded cheddar or Mexican blend cheese (remaining from 1½ cups total)

Optional Toppings

  • ¼ cup chopped green onions
  • Chopped cilantro
  • Extra sour cream

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Mix filling: In a large bowl, combine the shredded chicken with ½ cup of enchilada sauce, ½ cup of shredded cheese, sour cream, chili powder, cumin, and garlic powder. Stir until all ingredients are well incorporated.
  3. Assemble enchiladas: Spoon a generous amount of the chicken mixture onto each tortilla, then roll each tortilla up tightly and place seam-side down in the prepared baking dish.
  4. Add sauce and cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle the remaining 1 cup of shredded cheese on top to fully cover the dish.
  5. Bake covered: Cover the baking dish with foil and bake for 20 minutes to allow the flavors to meld and cheese to begin melting.
  6. Bake uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese is fully melted and bubbly with slight browning on top.
  7. Rest and garnish: Let the enchiladas rest for 5 minutes after baking to set. Garnish with chopped green onions, cilantro, and extra sour cream if desired before serving.

Notes

  • Using rotisserie chicken can save prep time and add extra flavor.
  • Add sautéed onions, beans, or corn into the filling for more texture and variety.
  • Customize toppings to your taste, such as avocado slices or jalapeños for extra spice.
