Description

These Easy Cheesy Beef Nachos are a crowd-pleasing favorite, perfect for game day or any casual gathering. Loaded with flavorful beef, beans, corn, and gooey cheese, these nachos are sure to be a hit!

Beef Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 (10 oz) bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or thawed from frozen)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup pickled jalapeños (optional)
  • 1/4 cup chopped green onions
  • Fresh cilantro, for garnish


Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Sauté onion and garlic: In a skillet over medium heat, sauté the onion until softened, about 3–4 minutes. Add garlic and cook for 30 seconds.
  3. Cook beef: Add ground beef to the skillet and cook until browned. Drain excess grease if needed. Season with chili powder, cumin, paprika, salt, and pepper. Cook for 2 more minutes.
  4. Assemble: Spread tortilla chips on a baking sheet. Layer beef, black beans, corn, and cheeses over the chips. Add olives and jalapeños if desired.
  5. Bake: Bake for 8–10 minutes until cheese is melted and bubbly.
  6. Finish and serve: Top with green onions and cilantro. Serve with favorite dips.
