- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1 (10 oz) bag tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, canned, or thawed from frozen)
- 1/4 cup sliced black olives (optional)
- 1/4 cup pickled jalapeños (optional)
- 1/4 cup chopped green onions
- Fresh cilantro, for garnish
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Sauté onion and garlic: In a skillet over medium heat, sauté the onion until softened, about 3–4 minutes. Add garlic and cook for 30 seconds.
- Cook beef: Add ground beef to the skillet and cook until browned. Drain excess grease if needed. Season with chili powder, cumin, paprika, salt, and pepper. Cook for 2 more minutes.
- Assemble: Spread tortilla chips on a baking sheet. Layer beef, black beans, corn, and cheeses over the chips. Add olives and jalapeños if desired.
- Bake: Bake for 8–10 minutes until cheese is melted and bubbly.
- Finish and serve: Top with green onions and cilantro. Serve with favorite dips.
