Ingredients
Scale
Pie Crust
- 1 package refrigerated pie crusts (2 crusts)
Filling
- 1 can (21 oz) cherry pie filling
Topping and Finish
- 1 egg (beaten, for egg wash)
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare Pie Crusts: On a lightly floured surface, roll out the refrigerated pie crusts and use a cookie cutter or glass to cut out circles approximately 2.5 to 3 inches in diameter.
- Add Filling: Spoon about 1 tablespoon of cherry pie filling onto the center of half of the cut circles, spreading slightly but leaving edges clear for sealing.
- Seal Pie Bites: Top each filled circle with another crust circle, pressing the edges together gently. Use a fork to crimp and securely seal the edges to prevent filling leakage during baking.
- Apply Egg Wash: Brush the tops of the sealed pie bites with the beaten egg; this helps achieve a beautiful glossy finish once baked.
- Add Cinnamon Sugar Topping: Mix sugar and ground cinnamon in a small bowl, then evenly sprinkle the mixture over the tops of the pie bites for extra flavor and sparkle.
- Vent Pies: Cut a small slit in the top of each pie bite to allow steam to escape during baking, preventing soggy crust and helping the filling cook evenly.
- Bake: Place the prepared pie bites on the lined baking sheet and bake in the preheated oven for 15 to 18 minutes or until golden brown and puffed.
- Cool and Serve: Remove from the oven and allow to cool slightly before serving to let the filling set and to avoid burns. Serve warm, optionally with a scoop of vanilla ice cream.
Notes
- You can substitute canned cherry pie filling with homemade cherry pie filling for a fresher taste.
- Serve warm with vanilla ice cream for an extra special treat.
- Store leftover pie bites in an airtight container at room temperature for up to 2 days to keep them fresh.
