Main Ingredients:
- 1 tablespoon olive oil
- 1 pound pork sausages (sliced into bite-sized pieces)
Vegetables:
- 1 large onion (chopped)
- 2 garlic cloves (minced)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 1 red bell pepper (chopped)
Additional Ingredients:
- 1 can (14 oz) diced tomatoes
- 1/4 cup tomato paste
- 1 cup chicken broth
- 1 can (15 oz) cannellini beans (drained and rinsed)
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Brown the Sausage: Heat olive oil in a skillet, brown the sausage pieces, and transfer to the crockpot.
- Sauté Vegetables: In the same skillet, sauté onion, garlic, carrots, celery, and red bell pepper until slightly softened. Transfer to the crockpot.
- Add Ingredients: Add diced tomatoes, tomato paste, chicken broth, cannellini beans, smoked paprika, thyme, oregano, salt, and pepper. Stir well.
- Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until vegetables are tender.
- Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- You can use any variety of sausage, including spicy or herbed.
- For a thicker consistency, remove the lid during the last 30 minutes of cooking.
- Serve with crusty bread or over mashed potatoes for a heartier meal.
