Description

This Crockpot Sausage Casserole is a hearty and flavorful dish that is perfect for a comforting dinner. Loaded with sausage, vegetables, beans, and aromatic herbs, this slow-cooked meal is sure to become a family favorite.

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 pound pork sausages (sliced into bite-sized pieces)

Vegetables:

  • 1 large onion (chopped)
  • 2 garlic cloves (minced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 1 red bell pepper (chopped)

Additional Ingredients:

  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1 cup chicken broth
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Brown the Sausage: Heat olive oil in a skillet, brown the sausage pieces, and transfer to the crockpot.
  2. Sauté Vegetables: In the same skillet, sauté onion, garlic, carrots, celery, and red bell pepper until slightly softened. Transfer to the crockpot.
  3. Add Ingredients: Add diced tomatoes, tomato paste, chicken broth, cannellini beans, smoked paprika, thyme, oregano, salt, and pepper. Stir well.
  4. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until vegetables are tender.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.

Notes

  • You can use any variety of sausage, including spicy or herbed.
  • For a thicker consistency, remove the lid during the last 30 minutes of cooking.
  • Serve with crusty bread or over mashed potatoes for a heartier meal.
