Description

This Crockpot Cheesy Chicken Broccoli Rice is a comforting and easy-to-make dish that the whole family will love. Tender chicken, fluffy rice, broccoli, and gooey cheese come together in a delicious slow-cooked meal.

Chicken and Rice:

  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Add-ins:

  • 2 cups broccoli florets (fresh or thawed from frozen)
  • 2 cups shredded cheddar cheese
  • ½ cup milk

Instructions

  1. Prep the Crockpot: Spray the crockpot with nonstick cooking spray.
  2. Cook the Chicken and Rice: Combine chicken, rice, broth, soup, and seasonings in the crockpot. Cook on low for 4–5 hours.
  3. Finish the Dish: Shred chicken, add broccoli, cheese, and milk. Cook for another 15–20 minutes until heated through.
