Chicken and Rice:
- 1 ½ pounds boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Add-ins:
- 2 cups broccoli florets (fresh or thawed from frozen)
- 2 cups shredded cheddar cheese
- ½ cup milk
Instructions
- Prep the Crockpot: Spray the crockpot with nonstick cooking spray.
- Cook the Chicken and Rice: Combine chicken, rice, broth, soup, and seasonings in the crockpot. Cook on low for 4–5 hours.
- Finish the Dish: Shred chicken, add broccoli, cheese, and milk. Cook for another 15–20 minutes until heated through.
- Serve: Stir and serve warm.

- Use freshly shredded cheese for better melting.
- If using fresh broccoli, chop it small for quicker cooking.
