Zucchini Fries:
- 2 medium zucchinis, cut into fry-sized sticks
- 1/2 cup whole wheat breadcrumbs (or panko for extra crunch)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg

Instructions
- Preheat Air Fryer: Preheat your air fryer to 400°F.
- Prepare Coating: Whisk the egg in a shallow bowl. In another bowl, mix breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
- Coat Zucchini: Dip zucchini sticks in egg, then coat in breadcrumb mixture, pressing lightly. Place in a single layer in the air fryer basket, spray with olive oil.
- Air Fry: Air fry for 8-10 minutes at 400°F, flipping halfway, until golden and crispy. Work in batches if needed.
