Description

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (chopped, oil-packed and drained)
  • 3 cups fresh baby spinach
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, cook until browned, about 5-6 minutes. Remove and set aside.
  2. In the same pot, add diced onion and cook until softened. Stir in garlic, oregano, thyme, and red pepper flakes; cook for 1 minute.
  3. Pour in chicken broth and bring to a simmer. Add cooked chicken, sun-dried tomatoes; simmer for 5 minutes.
  4. Stir in heavy cream and Parmesan cheese; simmer for 2-3 minutes.
  5. Add spinach and stir until wilted. Season with salt and pepper. Serve hot.

Notes

  • You can use rotisserie chicken for convenience.
  • For a lighter version, use half-and-half or coconut milk.
  • This soup pairs well with crusty bread or a side salad.
