For the Soup:
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 1 small yellow onion (diced)
- 3 cloves garlic (minced)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (chopped, oil-packed and drained)
- 3 cups fresh baby spinach
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken, cook until browned, about 5-6 minutes. Remove and set aside.
- In the same pot, add diced onion and cook until softened. Stir in garlic, oregano, thyme, and red pepper flakes; cook for 1 minute.
- Pour in chicken broth and bring to a simmer. Add cooked chicken, sun-dried tomatoes; simmer for 5 minutes.
- Stir in heavy cream and Parmesan cheese; simmer for 2-3 minutes.
- Add spinach and stir until wilted. Season with salt and pepper. Serve hot.
Notes
- You can use rotisserie chicken for convenience.
- For a lighter version, use half-and-half or coconut milk.
- This soup pairs well with crusty bread or a side salad.
