Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, usually about 8-10 minutes depending on the pasta type. Reserve a cup of pasta water before draining to adjust sauce consistency later.
  2. Sauté Onions: Heat a skillet over medium heat and add olive oil. Sauté the finely chopped onion for 3-4 minutes until translucent and fragrant, forming the flavor base for the sauce.
  3. Add Garlic: Add minced garlic to the skillet and sauté for an additional minute until aromatic, taking care not to burn it.
  4. Cook Tomatoes: Add chopped tomatoes to the skillet and cook for 5-7 minutes, allowing them to break down and release their juices, creating a fresh tomato base.
  5. Add Heavy Cream: Lower the heat and stir in the heavy cream slowly. Let the sauce simmer gently for about 5 minutes to thicken and blend flavors.
  6. Season Sauce: Season the sauce with salt and black pepper to taste. If the sauce seems too thick, add some reserved pasta water to reach desired consistency.
