  • 1 cup heavy cream or half-and-half

  • Fresh parsley or chives, chopped, for garnish


Instructions

  1. Sauté Aromatics: Heat olive oil or butter in a large pot over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes. Then add the minced garlic and sauté for 1 more minute to release its fragrance.
  2. Cook Mushrooms: Add the sliced mushrooms to the pot and cook for 8 to 10 minutes until they are golden brown and their moisture has evaporated, concentrating their flavor.
  3. Add Broth & Seasonings: Pour in the vegetable or chicken broth, then add thyme or Italian seasoning along with salt and black pepper to taste. Bring the mixture to a gentle boil to blend the flavors.
  4. Add Pasta: Stir in your choice of small pasta such as ditalini, orzo, or elbows. Cook according to the package instructions, usually 8 to 10 minutes, until the pasta is al dente, absorbing some of the broth.
  5. Make it Creamy: Lower the heat to a gentle simmer. Stir in the heavy cream or half-and-half along with grated Parmesan cheese if using. Let the soup simmer for 2 to 3 minutes until it thickens slightly and becomes creamy.
