Ingredients
Scale
Chicken and Rice
- 1 tablespoon olive oil
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups sliced mushrooms (white or cremini)
- 1 cup long-grain rice
- 2 cups chicken broth
Sauce and Garnish
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Sear the chicken: Heat olive oil in a large skillet or Dutch oven over medium heat. Season the chicken breasts with salt and pepper, then sear them for 3-4 minutes on each side until golden brown. Once seared, remove the chicken from the pan and set aside.
- Sauté aromatics and mushrooms: In the same pan, add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant. Add the sliced mushrooms and cook for another 5 minutes until tender and lightly browned.
- Toast rice and simmer with chicken: Stir in the long-grain rice to the mushroom mixture, toasting it for 1-2 minutes to enhance the flavor. Pour in the chicken broth, stir to combine, then nestle the seared chicken breasts back into the pan. Cover with a lid and simmer on low heat for about 20 minutes, or until the rice is cooked through and the chicken is tender.
- Add cream and cheese: Remove the lid and stir in the heavy cream and grated Parmesan cheese. Cook for an additional 2-3 minutes, allowing the sauce to thicken and become creamy.
- Garnish and serve: Sprinkle the chopped fresh parsley over the dish if desired. Serve the creamy mushroom chicken and rice warm for a satisfying meal.
Notes
- Use bone-in chicken if preferred, but adjust cooking time accordingly.
- For a lighter version, substitute heavy cream with half-and-half or milk.
- Feel free to swap Parmesan for other hard cheeses like Asiago or Pecorino Romano.
- For extra flavor, add a splash of white wine when sautéing mushrooms.
- This dish can be prepared in a large skillet or Dutch oven depending on availability.
