Ingredients
Scale
Dip Base
- 8 ounces cream cheese (1 brick, room temperature)
- 1 cup sour cream (room temperature)
- 1 ounce ranch seasoning mix (1 packet)
Meat & Vegetables
- 8 slices thick-cut bacon (cooked and crumbled, divided)
- 3 green onions (sliced, divided)
- 2 cups shredded cooked chicken
Cheeses
- 2 cups shredded cheddar cheese (divided: 1½ cups and ½ cup)
- 1 cup shredded Colby Jack cheese (divided: ½ cup and ½ cup)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Generously spray the inside of a 1-quart oven-safe baking dish with nonstick cooking spray to prevent sticking. Set aside the prepared dish.
- Mix Cream Cheese Base: In a large mixing bowl, use a hand mixer to beat the softened cream cheese until it becomes completely smooth. Then add the sour cream and the packet of ranch seasoning mix, blending thoroughly to combine all ingredients evenly.
- Add Bacon and Green Onions: Using a rubber spatula, fold in most of the cooked, crumbled bacon and 2 of the sliced green onions into the creamy mixture. Reserve about ¼ cup of bacon and green onions each for topping the dip later.
- Incorporate Cheese and Chicken: Gently fold in 1½ cups of shredded cheddar cheese and ½ cup of shredded Colby Jack cheese into the dip mixture, followed by the 2 cups of shredded cooked chicken. Ensure everything is evenly combined without overmixing.
- Bake the Dip: Transfer the combined mixture into the prepared baking dish. Place it in the preheated oven and bake for 25 minutes to heat through and allow the flavors to meld.
- Top and Finish Baking: Carefully remove the baking dish from the oven. Sprinkle the remaining cheeses (½ cup cheddar and ½ cup Colby Jack) and the reserved bacon evenly over the top. Return the dish to the oven and bake or broil on low heat for another 3 to 5 minutes until the cheese melts and becomes bubbly.
- Garnish and Serve: Remove the dish from the oven once the cheese topping is melted and bubbly. Sprinkle the remaining sliced green onions over the top. Serve the dip immediately with your favorite dippers such as tortilla chips, crackers, or fresh vegetables.
Notes
- For best results, use room temperature cream cheese and sour cream so the base mixes smoothly.
- You can prepare the dip a few hours ahead and refrigerate it; just add the reserved toppings right before baking.
- Butter or vegetable bacon can be used as a substitute if preferred for dietary reasons.
- To make it spicier, add diced jalapeños or a dash of hot sauce to the mixture.
- This dip is best served warm to enjoy the melty cheese texture.
