Description

Cod Provençal is a flavorful Mediterranean dish featuring tender cod loins simmered in a vibrant sauce of garlic, onions, tomatoes, olives, capers, and fresh herbs. This simple yet elegant recipe highlights the fresh, natural flavors of the ingredients, perfect for a healthy and satisfying meal.

Ingredients

Scale

For the Sauce

  • 2 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 onion, sliced
  • 2 large tomatoes, diced
  • 15-20 black olives
  • 10-15 capers
  • Fresh parsley, chopped (2 tbsp)
  • Fresh thyme, chopped (1 tbsp)
  • Red pepper flakes, to taste
  • Salt and pepper, to taste

For the Fish

  • 4 cod loins
  • Lemon juice, to taste

Instructions

  1. Sauté Garlic and Onions: Heat 2 tablespoons of olive oil in a pan over medium heat. Add the chopped garlic and sliced onion, cooking them until softened and translucent, about 3-5 minutes.
  2. Add Tomatoes and Seasonings: Stir in the diced tomatoes, chopped parsley, fresh thyme, red pepper flakes, salt, and pepper. Let the mixture cook for 10-12 minutes, stirring occasionally until the tomatoes break down into a chunky sauce.
  3. Add Olives and Capers: Mix in the black olives and capers thoroughly with the sauce, allowing the flavors to blend together for 2-3 minutes on the heat.
  4. Cook the Cod: Place the cod loins into the pan, spooning some sauce over them. Add lemon juice, and season with additional salt and pepper if needed. Cover and cook the cod for 5-7 minutes, or until the fish is opaque and easily flakes with a fork.

Notes

  • Use fresh cod or other firm white fish like haddock or halibut as a substitute.
  • Adjust red pepper flakes to control the heat level to your preference.
  • Serve with crusty bread, rice, or roasted potatoes to complement the sauce.
  • This dish is best enjoyed fresh but can be refrigerated for up to 2 days.
