Instructions

  1. Rinse the Rice: Add the uncooked long grain white rice to a sieve and rinse under cool running water until the water runs mostly clear. This removes excess starch and helps prevent the rice from becoming sticky.
  2. Cook the Rice: In a medium saucepan, combine the coconut milk and chicken or vegetable broth. Stir the mixture over high heat until smooth and it begins to boil. Once boiling, stir in the rinsed rice, cover the pan with a lid, reduce the heat to low, and let it simmer gently for 15 minutes without lifting the lid.
  3. Steam the Rice: After 15 minutes of cooking, turn off the heat but keep the pan covered. Allow the rice to sit undisturbed for another 15 minutes; this step lets the rice absorb the liquid and finish cooking through steaming.
  4. Fluff and Season: Remove the lid, fluff the rice gently with a fork to separate the grains. Stir in the lime juice, lime zest, and chopped cilantro. Season with salt and pepper to taste. Serve the rice immediately for the best flavor and texture.
