Cloud Bread Ingredients
- 3 large eggs, separated
- 3 oz (85g) cream cheese, softened
- 1/4 teaspoon cream of tartar
- 1 tablespoon honey (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder (optional, for fluffier bread)
Instructions
- Preheat the oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking.
- Whisk the egg whites: In a clean, dry bowl, beat the egg whites along with the cream of tartar using an electric mixer until stiff peaks form, which usually takes about 3-5 minutes. This step is crucial for achieving the bread’s airy texture.
- Mix the egg yolks: In a separate bowl, whisk together the egg yolks, softened cream cheese, honey if using, salt, and baking powder if using until the mixture is smooth and fully combined.
- Combine the egg whites and yolk mixture: Gently fold the whipped egg whites into the egg yolk mixture, taking care not to deflate the air whipped into the whites. Continue folding until completely incorporated and the batter is uniform.
- Shape the bread: Using a spoon or spatula, drop spoonfuls of the batter onto the prepared baking sheet, shaping each into rounds or ovals approximately 3 inches in diameter. You should get about 6-8 pieces.
- Bake the cloud bread: Bake the rounds in the preheated oven for 25-30 minutes until they turn golden brown and feel firm to the touch. If browning happens too quickly, loosely cover the bread with foil to prevent burning.
- Cool and serve: Allow the cloud bread to cool completely on a wire rack before removing. Serve as a sandwich base or enjoy with your favorite toppings and spreads.
Notes
- For a fluffier texture, adding baking powder is optional but recommended.
- Ensure the bowl and beaters for the egg whites are completely clean and dry to achieve stiff peaks.
- Do not overmix when folding to keep the batter light and airy.
- The honey is optional and is used to add a slight sweetness; omit for a savory version.
- Cloud bread is best eaten fresh but can be stored in an airtight container for up to 2 days.
- Reheat gently in a toaster or oven to restore softness before serving.
