Ingredients
Scale
Savory Roasted Sweet Potatoes
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Quinoa and Beans
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 (15-ounce) can black beans, drained and rinsed
Toppings and Wraps
- 8 small corn or flour tortillas
- 1/2 small red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta or cotija cheese (optional)
- Lime wedges for serving
Instructions
- Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with olive oil, chipotle chili powder, ground cumin, smoked paprika, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25 to 30 minutes, flipping halfway through, until the potatoes are tender and slightly crispy on the edges.
- Cook Quinoa: While the sweet potatoes roast, bring the quinoa and vegetable broth (or water) to a boil in a medium saucepan. Once boiling, reduce the heat to low, cover, and simmer gently for about 15 minutes until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and fluff the quinoa with a fork.
- Warm Tortillas: Heat the tortillas in a dry skillet over medium heat for about 30 seconds each side or microwave them wrapped in a damp paper towel until warm and pliable.
- Assemble Tacos: To build each taco, start with a warm tortilla and add a spoonful of cooked quinoa, followed by roasted sweet potatoes and black beans. Top with thinly sliced red onion, avocado slices, a sprinkle of fresh cilantro, and crumbled cheese if using. Serve immediately with lime wedges for squeezing over the top.
Notes
- For extra heat, add a dash of hot sauce or diced jalapeños to your tacos.
- Enhance flavor by drizzling chipotle mayo or lime crema over the assembled tacos.
- Make this recipe vegan by omitting the cheese or using a plant-based cheese alternative.
