Main Stew:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1–2 tablespoons harissa paste (adjust to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cinnamon
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 cup vegetable broth or water
- Salt and black pepper to taste
- Juice of 1/2 lemon
Herby Yogurt:
- 1/2 cup plain Greek yogurt
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon finely chopped fresh mint
- 1 teaspoon lemon juice
- Salt to taste
Instructions
- Main Stew: Heat olive oil in a large skillet or saucepan over medium heat. Add the onion and cook until soft. Stir in garlic, tomato paste, harissa, cumin, smoked paprika, and cinnamon. Add tomatoes, chickpeas, broth, salt, and pepper. Simmer for 15–20 minutes. Stir in lemon juice.
- Herby Yogurt: Mix yogurt, cilantro, mint, lemon juice, and salt in a bowl.
- Serve the stew hot, topped with herby yogurt and additional herbs if desired.
Notes
- Serve with warm flatbread, rice, or couscous.
- To make it vegan, use plant-based yogurt.
