A delightful twist on the classic Caprese salad, this Chicken Salad Caprese combines tender chicken with fresh cherry tomatoes, creamy mozzarella, and fragrant basil, all tossed in a tangy balsamic dressing. It’s a perfect dish for a light and flavorful meal.

For the Salad:

  • 2 cups cooked chicken breast (shredded or chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine, halved)
  • ¼ cup fresh basil leaves (chopped or torn)

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze (plus more for drizzling)
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, cherry tomatoes, mozzarella balls, and fresh basil.
  2. In a small bowl or jar, whisk together olive oil, balsamic glaze, lemon juice, garlic powder, salt, and black pepper.
