Instructions
- Preheat and cook noodles: Preheat your oven to 375°F. Bring a large pot of salted water to a boil and cook the egg noodles until al dente, about 7-8 minutes. Drain them and set aside to cool slightly.
- Sauté aromatics: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Mix casserole ingredients: In a large mixing bowl, combine the cooked noodles, shredded or cubed chicken, sautéed onion and garlic, thawed peas and carrots, cream of chicken soup, sour cream, milk, dried parsley, salt, black pepper, and 1 cup of the shredded cheddar cheese. Stir everything gently until well combined.
- Assemble casserole: Grease a 9×13-inch baking dish with butter or nonstick spray. Pour the mixture into the dish and spread it out evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
