- 1 red bell pepper, sliced
- 1 green bell pepper, sliced

- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper

- 4 large flour tortillas

Instructions
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken strips and season them evenly with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through. Remove the chicken from the skillet and set it aside.
- Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the sliced onion. Sauté for 4 to 5 minutes until the vegetables soften and develop slight char marks, enhancing their flavor.
- Combine Chicken and Veggies: Return the cooked chicken to the skillet with the sautéed peppers and onions. Stir everything together thoroughly to combine the flavors and keep warm on low heat while preparing the quesadillas.
- Assemble the Quesadillas: Either wipe the skillet clean or use a separate skillet over medium heat. Lay one flour tortilla flat in the pan. Sprinkle about a quarter of the shredded Mexican blend cheese onto one half of the tortilla. Top the cheese with a generous portion of the chicken fajita mixture and then fold the tortilla over to cover the filling.
- Cook the Quesadillas: Cook each quesadilla for 2 to 3 minutes on each side until the tortilla turns golden brown and crispy and the cheese melts completely. Use a spatula to carefully flip the quesadilla halfway through.
- Serve: Remove the cooked quesadilla from the pan and slice it into wedges. Serve warm with optional sides like sour cream, salsa, or guacamole for dipping and added flavor.

- For a healthier alternative, use whole wheat or gluten-free tortillas instead of regular flour tortillas.
