- Preheat Oven: Preheat your oven to 375 degrees F (190 C) to ensure it’s ready for baking the galette to a perfect golden brown.
- Prepare Filling: In a large mixing bowl, combine cherries, blueberries, cane sugar, flour, fresh lemon juice, and lemon zest. Stir gently until all ingredients are well mixed, which helps thicken the juices during baking.
- Roll Out Pie Crust: Roll the pie crust into a 12-inch round shape. Place the dough on a parchment-lined cookie sheet to prevent sticking and ease transfer to the oven.
- Assemble Galette: Mound the cherry and blueberry filling in the center of the crust, leaving about a 2-inch border around the edges free of filling to allow for folding.
- Fold Edges: Carefully fold the edges of the dough upward over the filling, slightly overlapping the dough to create a rustic edge that holds in the fruit.
