Meatloaf Bites:
- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 oz mozzarella cheese, cut into small cubes
- Optional: extra ketchup or barbecue sauce for brushing
Instructions
- Preheat the Oven: Preheat the oven to 375°F and lightly grease a mini muffin tin or baking sheet.
- Prepare Meat Mixture: In a large bowl, combine breadcrumbs and milk. Add ground beef, ground pork, egg, onion, garlic, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Stuff and Bake: Flatten 2 tablespoons of the meat mixture, place a cheese cube in the center, wrap meat around it, and form into a ball. Repeat with remaining mixture. Place in muffin cups, brush with sauce, and bake for 18–22 minutes.
- Rest and Serve: Let the meatloaf bites rest for 5 minutes before serving. Enjoy with dipping sauce of choice.
