Ingredients
Scale
Potatoes and Sausage
- 1 1/2 lbs baby potatoes, halved or quartered
- 14 oz smoked sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 packet ranch seasoning mix (about 1 oz)
- Salt and pepper to taste
Cheese Sauce and Garnishes
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 1/4 cup milk
- 2 green onions, sliced
- Chopped fresh parsley for garnish (optional)
Instructions
- Prepare and season potatoes and sausage: Preheat your oven to 400°F. In a large mixing bowl, toss the halved or quartered baby potatoes and sliced smoked sausage with olive oil and ranch seasoning mix until everything is evenly coated; season with salt and pepper to taste.
- Roast the mixture: Spread the seasoned potatoes and sausage in an even layer on a greased or parchment-lined baking sheet or casserole dish. Roast in the preheated oven for 30 to 35 minutes, stirring halfway through cooking to ensure even browning, until the potatoes are golden and tender.
- Make the cheese sauce: While the potatoes and sausage are roasting, combine sour cream, milk, and half of the shredded cheddar cheese in a small bowl; stir until smooth and well mixed.
- Add cheese sauce and finish baking: Once the potatoes and sausage are cooked, remove the baking dish from the oven and pour the prepared cheese sauce over the top. Sprinkle the remaining cheddar cheese evenly over the dish. Return it to the oven and bake for an additional 5 to 7 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Remove from the oven, top with sliced green onions and chopped fresh parsley if desired, and serve warm for a hearty, cheesy meal.
Notes
- Swap cheddar cheese for Monterey Jack or pepper jack to add a different flavor twist.
- Use turkey or chicken sausage as a lighter alternative to smoked sausage.
- Add steamed broccoli, bell peppers, or other vegetables to make it a complete one-pan meal.
