Instructions
- Prepare Corn and Onions: If using fresh corn, slice off the kernels from the cob. For frozen corn, make sure to thaw it fully, and if using canned corn, drain it well. Finely chop the green onions or chives to add fresh flavor to the batter.
- Make the Batter: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper to evenly distribute the dry ingredients. In a separate bowl, beat the eggs then combine with the milk. Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the corn kernels, shredded cheese, and chopped green onions until you have a thick, cohesive batter.
- Heat the Oil: Place a skillet or frying pan over medium heat and add 2–3 tablespoons of your chosen frying oil. Heat the oil until it is hot but not smoking, which usually takes a couple of minutes. The oil should shimmer and coat the pan evenly.
