Instructions
- Wash and Dry Strawberries: Rinse the strawberries thoroughly under cold water and lay them out on paper towels to dry completely.
- Beat Cream Cheese: In a large bowl or stand mixer, beat the softened cream cheese until smooth, making sure to scrape down the sides to remove any lumps.
- Mix Filling: Add the powdered sugar and sour cream to the cream cheese and beat together until fully incorporated and creamy. Optionally, mix in vanilla extract and a tiny pinch of salt, tasting to adjust the sweetness.
- Prepare Strawberries: Decide whether to remove the stems or leave them on. If keeping stems for presentation, select strawberries that can stand upright. If removing stems, cut the bottoms flat so strawberries can sit pointy side up.
- Slice Strawberries into Petals: Using a sharp paring knife, carefully cut each strawberry vertically almost to the base (about 1/4 inch from bottom), then cut each half into three wedges, creating six petals. Gently pull the petals apart to make space for filling.
- Prepare Piping Bag: Fit a piping bag with a large star or drop flower tip (e.g., Wilton tip 2D). Fill the bag with the cheesecake mixture using a glass to hold the bag upright, or use a ziplock bag with a corner snipped off if you don’t have a piping bag.
- Fill Strawberries: Insert the piping tip deep into the center of the strawberry petals and pipe the cheesecake filling upward, adjusting the petals with your fingers to evenly distribute the filling.
