Description

Cheddar Breakfast Bites are savory mini egg muffins packed with sharp cheddar cheese, bacon or sausage, and fresh vegetables. Perfect for quick breakfast or meal prep, these bite-sized treats are easy to make and bake in just under 30 minutes.

  • 1 cup shredded sharp cheddar cheese
  • 4 large eggs
  • ¼ cup milk

Meat

  • ½ cup cooked bacon or breakfast sausage, crumbled

Vegetables and Seasonings

  • ½ cup finely chopped spinach (optional)
  • ¼ cup chopped green onions
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

  • ½ cup biscuit mix (like Bisquick or similar)
  • Nonstick spray for greasing the muffin pan


Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C). Lightly grease or spray a mini muffin pan with nonstick spray to ensure easy removal of the bites after baking.
  2. Mix wet ingredients and seasonings: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper until fully combined and slightly frothy to incorporate air.
  3. Add solids: Stir into the egg mixture the shredded cheddar cheese, crumbled bacon or sausage, chopped spinach if using, chopped green onions, and biscuit mix. Mix thoroughly until all ingredients are evenly distributed.
  4. Fill muffin cups: Spoon the mixture evenly into the mini muffin cups, filling each about three-quarters full to allow room for rising during baking.
  5. Bake: Place the muffin pan in the preheated oven and bake for 15–18 minutes, until the tops are golden brown and the centers are fully set with no runny egg remaining.
  6. Cool and serve: Remove the pan from the oven and let the bites cool for 5 minutes in the pan. Then transfer them to a wire rack to cool slightly before serving warm or at room temperature.
