Ingredients
Scale
Potatoes
- 1 box Albert Bartlett Parmentier Potatoes
Cheese and Pastry
- 1/2 Camembert cheese
- 1 sheet puff pastry (approximately 300g)
- 1 egg (for egg wash)
Seasonings and Garnish
- 1 tsp dried mixed herbs
- Fresh thyme (for garnish)
- 1 tbsp white sesame seeds
- Sea salt (to taste)
- Drizzle of honey (for serving)
Instructions
- Preheat Oven: Preheat your oven to 220°C (fan 200°C, gas mark 7) to prepare for cooking the potatoes and baking the pastry later.
- Cook Potatoes: Place the Albert Bartlett Parmentier Potatoes on a baking tray and bake for 20 minutes, turning them halfway through to ensure even cooking and tenderness.
- Prepare Puff Pastry: Slice the puff pastry sheet into 12 even squares. Then, cut a 1cm border into each square, leaving the corners attached to create a raised edge for the filling.
- Apply Egg Wash: Lightly coat each puff pastry square with beaten egg to help achieve a golden, glossy finish when baked.
- Add Toppings: Place a slice of Camembert in the center of each square, add some cooked Parmentier Potatoes, sprinkle dried mixed herbs and white sesame seeds over the top for flavor and texture.
- Bake Pastry Bites: Reduce the oven temperature to 180°C (170°C fan, gas mark 4) and bake the prepared pastry squares for 15-20 minutes until they are puffed up and golden brown.
- Serve: Remove from the oven and drizzle each bite with honey. Garnish with fresh thyme for an aromatic finish and serve warm.
Notes
- Ensure the potatoes are fully cooked and tender before adding to the pastry to avoid undercooked bites.
- Use a sharp knife to score the pastry edges without cutting all the way through to help create a raised border.
- Drizzle honey just before serving to maintain the crispness of the pastry.
- Can be served as an appetizer, canapé, or light snack at gatherings and parties.
- For a vegetarian option, confirm that the puff pastry used is free from animal fats.
