Description

Deliciously rich and creamy Buckeye Bars feature a thick peanut butter base topped with a smooth layer of chocolate ganache. These no-bake treats combine the classic flavors of peanut butter and chocolate into easy-to-make bars that set in the refrigerator, perfect for satisfying your sweet tooth anytime.

Ingredients

Scale

Peanut Butter Base

  • 8 tablespoons salted sweet cream butter, softened
  • 3 cups creamy peanut butter
  • 2 teaspoons pure vanilla extract
  • 4 cups powdered sugar

Chocolate Ganache

  • 1 (12-ounce) package semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. Blend Peanut Butter Mixture: In a large mixing bowl, combine the softened butter and creamy peanut butter. Mix well until the mixture becomes smooth and creamy, ensuring that both ingredients are fully integrated.
  2. Add Vanilla and Powdered Sugar: Stir in the pure vanilla extract followed by the powdered sugar. Continue mixing until the mixture thickens and is firm enough to hold its shape when spread.
  3. Press into Pan: Grease a 9×13-inch pan lightly, then press the peanut butter mixture evenly into the bottom of the pan, smoothing the surface for an even layer.
  4. Melt Chocolate Ganache: In a heatproof bowl set over low heat, melt the semi-sweet chocolate chips along with the vegetable oil. Stir continuously until the mixture is completely smooth and glossy, forming a ganache.
  5. Pour Ganache Over Base: Carefully pour the warm ganache over the peanut butter layer in the pan, spreading it evenly to cover the entire surface.
  6. Refrigerate to Set: Place the pan in the refrigerator and chill for approximately 2 hours, or until the chocolate ganache is fully set and firm to the touch.
  7. Cut and Serve: Once set, remove the bars from the refrigerator. Use a sharp knife to cut into 15 squares. Serve chilled and enjoy the rich combination of peanut butter and chocolate.

Notes

  • For a firmer texture, you can refrigerate the bars overnight.
  • Use creamy peanut butter for the best smooth consistency.
  • If you prefer a sweeter chocolate topping, use milk chocolate chips instead of semi-sweet.
  • Store bars in an airtight container in the refrigerator for up to one week.
  • Allow bars to sit at room temperature for 10 minutes before serving if they are too hard straight from the fridge.
