Instructions

  1. Cook the Pasta: Boil the rotini pasta according to the package directions until al dente, then drain and rinse under cold water to cool and prevent sticking.
  2. Blanch the Broccoli: While the pasta cooks, blanch the broccoli florets in boiling water for 1 minute, then immediately transfer them to an ice bath to stop the cooking process, preserving their crispness and bright color. Drain and pat dry.
  3. Combine Salad Ingredients: In a large mixing bowl, combine the cooled pasta, blanched broccoli, cherry tomatoes, shredded carrots, red onion, cheddar cheese cubes, and sliced black olives.
  4. Prepare the Dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined and smooth.
