Pastry and Filling
- 1 package (2 sheets) refrigerated pie crusts or homemade pastry dough
- 1/2 cup jam, preserves, or fruit compote (any flavor)
- 1 egg (beaten, for egg wash)
Glaze
- 1 cup powdered sugar
- 1–2 tablespoons milk
- 1/2 teaspoon vanilla extract
- Sprinkles (optional)
Instructions
- Preheat and prepare baking sheet: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper to ensure the pop-tarts do not stick during baking.
- Cut the dough: Roll out the pie crust sheets and cut each into 3×4-inch rectangles. You should get about 8 rectangles per sheet, totaling approximately 16 rectangles.
- Assemble the pop-tarts: Arrange half of the rectangles on the prepared baking sheet. Spoon about 1 tablespoon of your chosen jam into the center of each rectangle, leaving a small border around the edges for sealing.
- Seal the pop-tarts: Brush the edges of the filled rectangles with beaten egg, then place the remaining dough rectangles on top. Use a fork to press and crimp the edges firmly, sealing the pop-tarts to prevent leaking during baking.
- Apply egg wash and vent: Brush the tops of the assembled pop-tarts with more beaten egg to promote a golden finish. Prick each pop-tart a few times with a fork to allow steam to escape.
- Bake: Bake in the preheated oven for 15–18 minutes or until the pop-tarts turn golden brown and the crust is cooked through.
- Cool: Remove from the oven and transfer the pop-tarts to a wire rack to cool completely before glazing.
- Prepare glaze: In a small bowl, whisk together powdered sugar, milk (start with 1 tablespoon and add more if needed), and vanilla extract until smooth and pourable.
- Glaze and decorate: Spread the glaze over the cooled pop-tarts evenly. If desired, sprinkle with colorful sprinkles before the glaze sets.
- Set and serve: Allow the glaze to set fully before serving the pop-tarts. Store any leftovers in an airtight container for up to 3 days.
