Eggs and Sauces

  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil (plus more as needed)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional for depth)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste


Instructions

  1. Preheat Griddle: Preheat your Blackstone griddle to medium-high heat. Once hot, drizzle the vegetable oil over the surface and spread it evenly.
  2. Sauté Onions and Garlic: Add the chopped onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds.
  3. Cook Vegetables: Add the thawed peas and carrots and cook for 2–3 minutes until heated through.
  4. Scramble Eggs: Push the vegetables to one side of the griddle, pour the beaten eggs onto the other side, and scramble until fully cooked. Then mix the eggs into the vegetables.
  5. Add Rice: Add the chilled rice to the griddle, breaking up any clumps with a spatula. Mix everything together and let the rice heat through, stirring occasionally.
  6. Season Rice: Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice. Toss to coat evenly and cook for another 3–4 minutes, allowing the rice to get slightly crispy.
