Ingredients
Scale
For the Dough:
- 3/4 cup warm milk (110°F)
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter (melted)
- 1 large egg
- 1/2 teaspoon salt
- 3 1/4 cups all-purpose flour
For the Filling:
- 2 cups fresh or frozen blackberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter (softened)
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Activate Yeast: In a small bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy to ensure the yeast is active.
- Make Dough: Stir in sugar, melted butter, egg, and salt into the yeast mixture. Gradually add flour, mixing until a soft dough forms.
- Knead the Dough: Knead on a floured surface for 5–6 minutes until smooth and elastic, then place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Prepare Filling: While dough rises, combine blackberries, sugar, cornstarch, and lemon juice in a saucepan. Cook over medium heat for 5–7 minutes until thickened, then let cool completely.
- Roll and Spread: Once the dough has risen, roll it into a 12×16-inch rectangle. Spread softened butter over the dough, then evenly spread the cooled blackberry filling.
- Shape Rolls: Roll up the dough tightly from the long side and cut into 12 equal rolls. Arrange rolls in a greased 9×13-inch baking dish, cover, and let rise for another 30 minutes.
- Bake: Preheat oven to 350°F (175°C). Bake rolls for 25–30 minutes until golden brown.
- Make Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
- Glaze and Serve: Drizzle the glaze over warm rolls before serving to add a sweet finishing touch.
Notes
- For extra richness, add cream cheese to the glaze.
- These rolls can be prepared ahead: cover and refrigerate overnight before the second rise, then bake in the morning.
- Frozen blackberries work well but should be thawed and drained before cooking to avoid excess moisture.
