Instructions
- Prepare the Pineapple Mixture: In a blender, combine the diced pineapple with half of the lime juice and zest. Blend until smooth to create a vibrant tropical base.
- Prepare the Blackberry Mixture: In the blender, puree the blackberries along with the remaining lime juice and zest until smooth. Strain if desired to remove seeds for a smoother texture.
- Mix the Coconut Cream: In a separate bowl, combine the unsweetened coconut milk, coconut cream, and sweetened condensed milk. Stir well until fully blended to create a rich, creamy coconut mixture.
- Layer the Ice Pops: To assemble, alternate spoonfuls of pineapple puree, blackberry puree, and coconut cream into ice pop molds. Use a skewer or spoon to gently swirl the mixtures together for a marbled effect, being careful not to overmix.
- Freeze: Insert sticks into the molds and freeze the popsicles for at least 6 hours or until fully set and firm.
