Description

This Bang Bang Chicken Bowl is a quick and flavorful Asian-inspired main course featuring tender, seasoned chicken cooked on the stovetop and served over a bed of rice with fresh vegetables and a spicy, creamy bang bang sauce. Perfect for a speedy dinner or meal prep, this gluten-free dish packs a punch with its balanced heat and vibrant textures.

Ingredients

Scale

Chicken and Rice

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cooked white rice (or brown rice)

Vegetables and Garnishes

  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped fresh cilantro (optional)

Bang Bang Sauce

  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey

Instructions

  1. Prepare the Chicken: Heat the olive oil in a skillet over medium heat. Season the chicken pieces with garlic powder, smoked paprika, salt, and pepper. Cook the chicken for 5-7 minutes until golden brown and fully cooked through.
  2. Make the Bang Bang Sauce: While the chicken cooks, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey in a small bowl to create a smooth, spicy sauce.
  3. Assemble the Bowls: In serving bowls, layer the cooked rice first, then add shredded red cabbage, shredded carrots, chopped cucumber, and the cooked chicken pieces.
  4. Add the Sauce and Garnish: Drizzle the bang bang sauce generously over the top of the assembled ingredients. Finish by sprinkling sliced green onions, sesame seeds, and fresh cilantro if using.
  5. Serve: Serve the bowls immediately while the chicken is warm and the vegetables fresh for the best flavor and texture experience.

Notes

  • You can use rotisserie chicken for a shortcut to save cooking time.
  • Swap the rice for cauliflower rice to make a low-carb version.
  • Adjust the amount of sriracha in the sauce to suit your preferred spice level.
