Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey

Topping

  • 1 cup shredded mozzarella cheese
  • 1/2 cup panko breadcrumbs

Garnish

  • 2 green onions, thinly sliced

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt and pepper. Sear them for 3–4 minutes until lightly browned on the outside; they don’t need to be fully cooked at this stage.
  3. Transfer chicken to baking dish: Move the seared chicken pieces into the prepared baking dish, spreading them evenly.
  4. Make the sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and well combined.
  5. Coat chicken with sauce: Pour the sauce over the chicken in the baking dish, stirring gently to coat all pieces evenly.
  6. Add cheese and breadcrumbs: Sprinkle shredded mozzarella cheese evenly over the coated chicken, then add a layer of panko breadcrumbs on top.
  7. Bake: Bake in the preheated oven for 20–25 minutes, until the chicken is fully cooked through and the cheese and breadcrumbs are golden and bubbly.
