Chicken
- 1 ½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper, to taste
Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey
Topping
- 1 cup shredded mozzarella cheese
- 1/2 cup panko breadcrumbs
Garnish
- 2 green onions, thinly sliced
- Chopped fresh parsley (optional)
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Sear the chicken: Heat olive oil in a large skillet over medium heat. Season the bite-sized chicken pieces with salt and pepper. Sear them for 3–4 minutes until lightly browned on the outside; they don’t need to be fully cooked at this stage.
- Transfer chicken to baking dish: Move the seared chicken pieces into the prepared baking dish, spreading them evenly.
- Make the sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth and well combined.
- Coat chicken with sauce: Pour the sauce over the chicken in the baking dish, stirring gently to coat all pieces evenly.
- Add cheese and breadcrumbs: Sprinkle shredded mozzarella cheese evenly over the coated chicken, then add a layer of panko breadcrumbs on top.
- Bake: Bake in the preheated oven for 20–25 minutes, until the chicken is fully cooked through and the cheese and breadcrumbs are golden and bubbly.
- Garnish and serve: Remove from the oven and let cool slightly. Garnish with thinly sliced green onions and chopped fresh parsley if desired. Serve warm.

- For a spicier dish, increase the amount of sriracha or add crushed red pepper flakes to the sauce.
