Asparagus:

  • 2 tablespoons olive oil

  • ¼ teaspoon black pepper
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh thyme leaves (optional)


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prepare Salmon and Asparagus: Arrange the salmon fillets and asparagus on the sheet. Drizzle with olive oil and season with salt and pepper.
  3. Make Balsamic Glaze: In a small saucepan, whisk together balsamic vinegar, honey, Dijon mustard, and garlic. Simmer for 5–7 minutes until slightly thickened.
  4. Glaze and Roast: Brush the glaze over the salmon and asparagus. Roast in the oven for 12–15 minutes until salmon is flaky and asparagus is tender.
