Salmon:
- 4 salmon fillets (about 6 oz each)
Asparagus:
- 1 bunch fresh asparagus (trimmed)
Other Ingredients:
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic (minced)
- 1 teaspoon fresh thyme leaves (optional)
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Prepare Salmon and Asparagus: Arrange the salmon fillets and asparagus on the sheet. Drizzle with olive oil and season with salt and pepper.
- Make Balsamic Glaze: In a small saucepan, whisk together balsamic vinegar, honey, Dijon mustard, and garlic. Simmer for 5–7 minutes until slightly thickened.
- Glaze and Roast: Brush the glaze over the salmon and asparagus. Roast in the oven for 12–15 minutes until salmon is flaky and asparagus is tender.
- Serve: Optionally, sprinkle with fresh thyme before serving.
Notes
- You can double the glaze and serve extra on the side.
