Omelet Mixture
- 8 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced cooked ham
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 3/4 cup shredded cheddar cheese
Topping
- 1/4 cup shredded cheddar cheese

- 1 tablespoon olive oil or butter
Instructions
- Preheat and grease: Preheat your oven to 375°F. Grease a 9×9-inch or 8×8-inch baking dish thoroughly with olive oil or butter to prevent sticking.
- Mix eggs and seasonings: In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until the mixture is smooth and well combined.
- Add vegetables and ham: Stir in the diced cooked ham, green and red bell peppers, diced onion, and 3/4 cup of shredded cheddar cheese until evenly distributed throughout the egg mixture.
- Pour and top: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1/4 cup of shredded cheddar cheese on top to create a golden, cheesy crust.
- Bake: Place the dish in the oven and bake for 35 to 40 minutes, or until the eggs are fully set in the center and the top is golden brown.
- Cool and serve: Remove from the oven and allow the casserole to cool for about 5 minutes. Slice into six servings and serve warm for breakfast, brunch, or even dinner.
