  • 1/2 cup red bell pepper, diced
  • 1/2 cup onion, diced

  • 1 cup shredded cheddar cheese (divided into 3/4 cup and 1/4 cup)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish to prevent sticking.
  2. Sauté vegetables: Heat olive oil or butter in a skillet over medium heat. Add the diced onion, green, and red bell peppers, cooking for 4–5 minutes until they are softened. Remove from heat and set aside.
  3. Mix eggs and seasoning: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
  4. Combine ingredients: Stir the sautéed vegetables, diced cooked ham, and 3/4 cup of shredded cheddar cheese into the egg mixture, ensuring everything is evenly distributed.
  5. Pour and top: Pour the combined mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup shredded cheddar cheese evenly on top.
  6. Bake: Place the dish in the oven and bake for 30–35 minutes, or until the eggs are fully set and the top has a nice golden color.
