- 2 large eggs
- 3/4 cup milk

- 1 1/2 cups peeled and diced apples (such as Granny Smith)
- 1/2 cup powdered sugar
- 1 tablespoon milk (for glaze)
- 1/4 teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven: Preheat the oven to 375°F and prepare a muffin tin.
- Mix dry ingredients: In a bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Combine wet ingredients: In another bowl, mix eggs, milk, applesauce, vanilla, and melted butter.
- Blend wet and dry: Combine wet and dry ingredients, then fold in diced apples.
- Bake: Spoon batter into muffin tin and bake for 18–22 minutes.
- Make glaze: Whisk powdered sugar, milk, and vanilla for glaze.
- Glaze and serve: Drizzle glaze over cooled fritters and enjoy!
Notes
- You can use Honeycrisp or Fuji apples for a firm texture.
- For added crunch, mix in chopped pecans or walnuts.
