Ingredients
Scale
Chicken and Rice
- 2–3 boneless, skinless chicken breasts (about 1½–2 pounds), cut into strips or cubes
- 1 cup uncooked long-grain white rice
Sauce
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 (14.5 oz) can chicken broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Others
- 1 tablespoon olive oil (for greasing)
- Optional: Chopped fresh parsley for garnish
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or cooking spray to prevent sticking.
- Make the Sauce: In a large bowl, whisk together the softened cream cheese, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and black pepper until the mixture is smooth and creamy.
- Assemble Casserole: Evenly spread the uncooked long-grain white rice in the greased baking dish. Arrange the cut chicken pieces over the rice, then pour the prepared sauce evenly over the top.
- Cover and Bake: Cover the dish tightly with aluminum foil to trap steam and bake in the preheated oven for 1 hour. This allows the rice to cook fully and the chicken to become tender.
- Brown the Top: After baking covered, remove the foil and continue baking uncovered for an additional 10–15 minutes. This step gives the casserole a beautifully golden top and ensures the rice is fully tender.
- Rest and Garnish: Let the casserole rest for 5 minutes before serving to set. Garnish with chopped fresh parsley if desired for a fresh, vibrant finish.
Notes
- Make sure to use long-grain white rice as it cooks best in this recipe for a fluffy texture.
- Cut the chicken into uniform pieces to ensure even cooking.
- For extra flavor, you can add a sprinkle of shredded cheese on top during the last 10 minutes of baking.
- If you prefer, substitute cream of chicken soup with a homemade white sauce for a less processed version.
- Letting the casserole rest after baking helps it set and makes serving easier.
