Description

These Air Fryer Zucchini Fries are crispy, golden, and perfectly seasoned zucchini sticks coated with a flavorful breadcrumb and Parmesan mixture, air-fried to perfection for a healthy and delicious snack or side dish.

Ingredients

Scale

Vegetables

  • 2 medium zucchini

Breading & Coating

  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Finishing

  • Olive oil spray

Instructions

  1. Prepare the zucchini: Trim the ends of the zucchini and cut them into ½-inch thick sticks, ensuring uniform size for even cooking.
  2. Set up the dredging stations: Arrange three shallow dishes—one with the all-purpose flour, one with the beaten eggs, and one with a mixture of Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
  3. Coat the zucchini sticks: Dip each zucchini stick first into the flour, then into the eggs, and finally roll it in the breadcrumb mixture, pressing gently to adhere the coating well.
  4. Arrange in air fryer basket: Place the coated zucchini sticks in a single layer in the air fryer basket, making sure they don’t overlap, and lightly spray them with olive oil to promote crispiness.
  5. Air fry: Cook at 400°F (200°C) for 10 to 12 minutes, or until the zucchini fries are golden brown and crispy on the outside.
  6. Serve: Remove from the air fryer and serve immediately alongside your favorite dipping sauce for a tasty snack or side dish.

Notes

  • For extra crispiness, flip the zucchini fries halfway through cooking.
  • Use gluten-free flour and breadcrumbs to make this recipe gluten-free.
  • Serve with ranch, marinara, or garlic aioli for dipping.
  • Do not overcrowd the air fryer basket to ensure even cooking.
  • Store leftovers in an airtight container and reheat in the air fryer to maintain crispness.
