Description

These Air Fryer Boneless Chicken Thighs are juicy, flavorful, and perfectly cooked in just 25 minutes. Marinated in a delicious blend of honey, soy sauce, lime juice, Dijon mustard, garlic, curry powder, and coriander, these chicken thighs are tender and packed with savory and slightly sweet flavors. Using an air fryer not only speeds up the cooking process but also achieves a crispy outside while keeping the inside moist and tender, making this recipe a quick and healthy weeknight dinner option.

Ingredients

Scale

Marinade & Chicken

  • 1 ½ lbs. boneless skinless chicken thighs (fat trimmed)
  • 3 Tbsp. oil (avocado or olive)
  • 2 Tbsp. honey (or pure maple syrup or brown sugar)
  • 1 Tbsp. soy sauce or Tamari (or gluten-free Tamari)
  • 1 Tbsp. lime juice (freshly squeezed)
  • 2 tsp. Dijon mustard
  • 1 clove garlic (finely minced)
  • ½ tsp. curry powder
  • ½ tsp. coriander
  • 1 tsp. salt (to taste)
  • ¼ tsp. black pepper (to taste)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the oil, honey, soy sauce, lime juice, Dijon mustard, finely minced garlic, curry powder, coriander, salt, and black pepper until well combined to form the flavorful marinade.
  2. Marinate the Chicken: Add the boneless skinless chicken thighs to the bowl and toss them thoroughly until each piece is fully coated in the marinade. Cover and let them marinate for at least 30 minutes, or up to overnight in the refrigerator for maximum flavor infusion.
  3. Preheat the Air Fryer: Preheat your 6-quart air fryer to 380°F (193°C) for at least 3 minutes to ensure it is hot and ready for cooking.
  4. Cook the Chicken: Arrange the marinated chicken thighs in a single layer inside the air fryer basket. Cook for 14 to 15 minutes, flipping the thighs halfway through the cook time using tongs. While flipping, brush any remaining marinade on top of the chicken for added flavor and moisture.
  5. Serve: Once the chicken thighs are cooked through and have reached an internal temperature of 165°F (74°C), remove them from the air fryer and serve immediately. Pair with your favorite sauce or side dishes for a complete meal.

Notes

  • For best results, marinate the chicken for at least 1 hour or overnight to maximize flavor.
  • Ensure the chicken thighs are in a single layer in the air fryer to allow even cooking and crispy edges.
  • You can substitute honey with maple syrup or brown sugar as desired.
  • Use a meat thermometer to confirm the chicken reaches a safe internal temperature of 165°F (74°C).
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
